TOMATO & GREEN CHILE SAUCE
|A BOWL OF SAUCE OFTEN IS STANDARD FEATURE ON THE MEXICAN TABLE. SERVE THIS COLORFUL FRESH SAUCE FOR EACH PERSON TO SPOON ONTO THEIR FOOD TO SUIT THEIR OWN TASTE. YOU CAN MAKE IT AS HOT AS YOU LIKE, DEPENDING ON THE NUMBER OF CHILES YOU USE.
6 medium Tomatoes, peeled and finely chopped
1/2 cup diced Green Chiles
1/3 Onion, minced
1 tsp. Salt
Seeded Jalapenos, minced, to taste
Peel and finely chop the tomatoes. Mix with green chiles, onion, salt, and as many jalapeno chiles as pleases y our taste (about 1 jalapeno to each cup of sauce will make it noticeably hot.)
Makes 3 cups.
